Carrot Hummus

Ingredients:

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 3 tablespoons tahini
  • 2 tablespoons olive oil
  • 2 tablespoons carrot powder
  • 2 cloves garlic, minced
  • Juice of 1 lemon
  • Salt and cumin to taste
  • Fresh parsley for garnish

Directions:

In a food processor, combine the chickpeas, tahini, olive oil, carrot powder, minced garlic, and lemon juice.

Blend until smooth and creamy. If the mixture is too thick, you can add a small amount of water, one tablespoon at a time, until you reach the desired consistency.

Add salt and cumin to taste. Blend again to incorporate the seasonings evenly.

Serve the carrot hummus with pita bread, fresh vegetables, or use it as a spread on sandwiches and wraps.
